Vegetarian spaghetti

Ingredients for 4 servings:

  • 350 g pasta (spaghetti)
  • 200 g carrot(s)
  • 100 g mushrooms
  • 1 clove(s) garlic
  • 1 onion(s)
  • 200 g leek
  • 1 bell pepper(s), red
  • 2 dl coffee cream
  • 2 eggs
  • 150 g cheese, grated
  • Salt and pepper, from the mill
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Spaghetti with vegetable sauce

Finely chop the vegetables and mushrooms. Shake the eggs, cream, and grated cheese in a shaker. Cook the spaghetti as usual. Sauté the finely chopped vegetables in a pan and add the contents of the shaker. Remove the pan from the heat. Season the resulting spaghetti sauce with salt and pepper and add the finely chopped chives. Do not bring back to a boil, or the eggs will curdle in the sauce. Pour the sauce over the hot spaghetti, stir, and serve immediately!
