Tomato strips a la Maja

Ingredients for 4 servings:

  • 500 g pork, shredded
  • 2 m.-sized onion(s)
  • 1 medium-sized garlic clove(s)
  • 200 ml white wine
  • ½ tsp chili pepper(s), dried
  • 1 tsp broth, granulated
  • 2 tsp sweet paprika powder
  • ½ tsp salt
  • 1 tbsp Italian herbs
  • 2 tbsp olive oil
  • 1 pack of tomatoes, pureed
  • 2 tbsp tomato ketchup
  • 1 dashes Tabasco
  • 4 m.-large tomato peppers, from the jar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 3 hours

with Italian herbs

First, mix the spices with the meat. Next, finely dice the onions and garlic – this is best done in a food processor. Now add the onion/garlic mixture to the meat and mix with the wine, bell peppers, tomatoes, and Italian herbs. Let everything simmer for 1.5 hours. Then place the meat in a preheated pan and fry until the liquid has evaporated. Now add the oil and sear the meat. Now add a little more water and Tabasco so that the meat has cooked for about 50-60 minutes until it is nice and tender. Now add the ketchup and tomato puree and let simmer for another 5 minutes. If desired, you can soften the flavor a little with a little yogurt or sour cream. Tastes great with rice.
