Tomatoes in oil (made from dried tomatoes)

Ingredients for 1 servings:

  • 2 liters of water
  • ¼ liter white wine
  • ⅛ liter vinegar (white wine vinegar)
  • 250 g dried tomatoes
  • Herbs (e.g. oregano, basil, rosemary, thyme)
  • olive oil

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Pomodori sott’olio (this is a recipe from Italy that is much cheaper than store-bought tomatoes in oil!)

Bring water, white wine, and vinegar to a boil. Add the sun-dried tomatoes and remove the pan from the heat. Let the tomatoes steep in the liquid for at least 30 minutes, then strain through a sieve and let drain for 4 hours (pat dry with a kitchen towel if necessary). Then marinate the tomatoes and herbs in olive oil.
