Tomatoes – Mozzarella – Potatoes

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 500 g tomatoes
  • 300g mozzarella
  • 3 onions
  • 2 cloves garlic
  • 1 bunch of basil
  • 1 bunch of parsley
  • 6 tbsp oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes and cut into very thin slices. Wash and slice the tomatoes. Slice the mozzarella. Peel the onions and slice them into thin rings. Chop the garlic. Fry the potatoes in 4 tablespoons of oil until light yellow. Sauté the onions and garlic in 2 tablespoons of oil until translucent. Finely chop the parsley and basil. Butter a shallow baking dish. Add the potatoes as the bottom layer. Season with salt and pepper. Arrange the parsley on top, then the onions, then the tomatoes. Season with salt and pepper, then sprinkle with basil. Finally, arrange the mozzarella slices on top. Bake in a preheated oven at 200°C for 30 minutes.
