Ingredients for 1 servings:
- 1 kg tomatoes
- 1 orange(s), untreated, grated peel and juice
- 1 pack of citric acid
- 1 tsp ginger, freshly grated
- 500 g gelling sugar (2:1)

Makes 4 to 5 jars of approx. 300 g each
Peel the tomatoes, remove the stems, and then puree. This yields approximately 900g of fruit purée. Add the grated orange zest and juice to the fruit purée along with the grated ginger, gelling sugar, and citric acid and mix well. Bring to a boil and simmer for approximately 4 minutes. Skim off any foam that forms. Pour into prepared jars while still hot and seal immediately.
