Tomatoes – Salmon – Pasta

Ingredients for 4 servings:

  • 400g spaghetti
  • 400 g cherry tomatoes
  • 3 tbsp olive oil
  • 600 g salmon fillet(s)
  • 4 tbsp pesto
  • salt and pepper
  • basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the spaghetti in plenty of salted water for about 10 minutes. Meanwhile, rinse the cherry tomatoes and halve them. Heat the olive oil in a pan and fry the tomatoes for about 3 minutes. Then remove from the pan. Rinse the salmon fillet, pat dry, and dice. Fry in the oil for about 6 minutes. Season with salt and pepper and toss with the tomatoes and pesto. Drain the spaghetti, let it drain, and arrange them on 4 plates in nests. Place the tomato and salmon mixture in the center of each plate, garnish with basil, and serve.
