Toni's rice salad – great to take away

Ingredients for 4 servings:

  • 1 bell pepper(s), red
  • 1 bunch parsley, flat
  • 1 onion(s)
  • 1 handful of olives, green or black
  • 1 small can of corn
  • 1 can of tuna in oil (110 g)
  • 1 can white beans (400 g)
  • 1 pack of feta cheese
  • 1 pack of rice (10 min. whole grain rice, 400 g)
  • e.g. white wine vinegar
  • n. B. Oil
  • e.g. lemon juice
  • e.g. salt and pepper
  • e.g. chili flakes, optional

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

simple, quick, perfect as a lunch in the office

Wash and chop the bell pepper and parsley. Peel the onion and cut into half rings or cubes. Drain all canned ingredients and add them along with the chopped feta. Cook the rice, rinse with cold water, and mix with the other ingredients. Mix the dressing ingredients to taste and fold in. Season to taste. This rice salad is perfect when you’re short on time and don’t feel like cooking, but still want something healthy. It can also be prepared the day before and taken to work, a party, etc.
