Tortellini casserole with soy mince

Ingredients for 4 servings:

  • 125 g soy shreds, coarse
  • 400 ml vegetable stock
  • 1 tsp gyro seasoning or meat seasoning
  • ½ tsp smoked salt
  • pepper
  • 1 onion(s)
  • ½ stalk(s) leek
  • Parsley or chives
  • 2 tbsp olive oil
  • 300 ml cream
  • 500 g tortellini with vegetarian filling
  • 100g Gouda

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cook the tortellini in salted water until al dente. Add the soy strips to the vegetable broth, bring to a boil, and then let them swell for 10 minutes. The liquid should be almost absorbed by the end. Then place everything in a sieve and drain well. Season with meat seasoning, salt, and pepper. Smoked salt gives the soy a more meaty flavor. Meanwhile, finely chop the onion and leek. Chop the parsley and/or chives, or use a frozen product. Heat the olive oil in a pan. Add the onion and soy strips and fry until lightly browned. Add the leek and fry as well. Deglaze everything with the cream. If you want to save calories, you can also use a cream substitute, such as Cremefine. If the sauce is too thick, simply add a little vegetable broth. Season everything again with salt and pepper. Place the cooked tortellini in a baking dish and pour the sauce over them. Grate the Gouda and sprinkle it on top. Bake at 200°C for about 20 minutes.
