Ingredients for 8 servings:
- 1 kg tortellini, fresh
- 1 jar red pesto
- 1 handful of arugula
- 1 handful of cherry tomatoes
- 250 g mozzarella, mini balls
- e.g. Parmesan

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
quick, easy salad
Cook the tortellini according to the package instructions and let cool. Add the pesto and mix well to ensure the pesto is evenly distributed among all the tortellini. Wash the arugula, pat dry, and cut into thirds. Stir in the arugula. Add the tomatoes and mozzarella and mix well. Just before serving, grate fresh Parmesan cheese over the top. If you like, you can also halve the tomatoes and mozzarella balls, but the tomatoes will lose some of their juice.
