Tortellini salad with feta cheese

Ingredients for 6 servings:

  • 500 g tortellini of your choice
  • 1 bunch of spring onions
  • 3 bell peppers
  • 250 g feta cheese
  • 2 packs of salad seasoning mix (7-herb mix), to mix
  • 500 g Miracle Whip
  • 1 large cucumber(s)
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the tortellini according to the package instructions until al dente, then briefly cool and let cool. Tip: I always use the same saucepan later to mix the remaining ingredients. In the meantime, rinse the cucumber and halve it lengthwise. Use a teaspoon to scrape out the core. Cut the cucumber into 6 long strips and then finely dice these. Trim the bell peppers and also finely dice them. Trim the spring onions and slice them into thin rings, including the green stems. Cut the feta cheese crosswise and dice these two layers as well. For the dressing, mix the herb mixture according to the package instructions and mix with the Miracle Whip. Now return the cooled tortellini to the pan and mix with all the chopped ingredients. Finally, add the dressing and fold in lightly. Let it sit in the refrigerator for about 1 hour before serving, then stir again, season to taste, and transfer to the final serving bowl. The salad pairs well with grilled food or simply as a side dish to other dishes.
