White heirloom carrot in mustard and parsley sauce

Ingredients for 2 servings:

  • 200 g carrot(s), white
  • 1 small onion(s)
  • 2 cloves garlic
  • 100 ml water
  • 1 tbsp rapeseed oil
  • 1 tsp mustard or more
  • 2 tbsp parsley, chopped
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Clean the carrots, peel them if necessary, and slice them. Peel and dice the onion and garlic. First, sauté the onion and garlic in oil. Then add the carrots. Pour in water and simmer until tender. Add the mustard and stir in. Stir in the parsley. Season to taste and serve.
