Tortellini salad with turkey breast and mango

Ingredients for 8 servings:

  • 500g tortellini
  • 400 g turkey breast
  • oil
  • 1 cucumber(s)
  • 4 beefsteak tomatoes
  • 1 mango(s), ripe
  • 1 stalk(s) leek
  • 250 ml mayonnaise, low-fat (4.9% fat)
  • 1 cup sour cream
  • 1 cup of sweet cream
  • salt and pepper, pepper
  • Balsamic vinegar, white
  • Sugar
  • 2 handfuls of chopped Italian herbs (e.g. oregano, thyme, basil)
  • 2 garlic cloves

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

as a salad for grilling or as a starter

Cook the tortellini according to the package instructions and let cool. Cut the turkey breast into small cubes, fry in a little oil, and let cool. Finely chop the cucumber, tomatoes, mango, and leek and mix with the tortellini and the meat. For the sauce, combine the mayonnaise with the sour and sweet cream, the herbs, and the crushed garlic. Season with white balsamic vinegar, salt, pepper, and sugar. Pour over the salad, toss to coat, and let it marinate well.
