Tortellini salad

Ingredients for 4 servings:

  • 2 packs of tortellini from the refrigerated counter
  • 2 tomatoes
  • 1 small bunch of spring onions
  • 1 ball(s) of mozzarella
  • 4 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • pepper
  • Salt
  • Parmesan, freshly grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the tortellini and let cool. Wash the tomatoes and spring onions and finely dice them. Finely dice the mozzarella. Combine the balsamic vinegar and olive oil and season with salt and pepper. Mix the tomatoes, spring onions, and mozzarella with the sauce. Add the cooled tortellini and mix everything well again. Finally, grate the fresh Parmesan cheese and sprinkle it over the prepared salad.
