Ingredients for 2 servings:
- 2 tortilla(s), purchased or homemade
- 2 tbsp sour cream
- 2 tbsp tomatoes, pureed
- 60 g cheese, grated
- ½ zucchini, depending on the size a little more or less
- 1 small onion(s), sliced
- 100 g turkey breast fillet(s) or chicken breast fillet, cut into small pieces
- some oil
- ½ bell pepper(s)
- ½ cucumber(s)
- 1 large beefsteak tomato(s)
- some lamb’s lettuce
- possibly sauce (guacamole), bought or homemade
- salt and pepper
- Paprika powder
- Parsley, fresh or dried

First, mix the passata and sour cream and spread it on the tortillas. Spread the grated cheese on the tortillas and place them in an oven preheated to 100°C. Wash the vegetables. Cut the zucchini into small pieces and fry them in a pan with oil for about 5 minutes. Then add the chopped onion and the chopped meat and fry until cooked through. The zucchini pieces should be lightly browned. Season with pepper, salt, and paprika. Meanwhile, dice the bell peppers, cucumber, and tomatoes. Once the cheese has melted on the tortillas, remove them and spread the guacamole on top. Then spread the remaining ingredients, including the lettuce and parsley, on top. Roll or fold the tortillas, or simply leave them as they are, and serve on plates. The recipe is very versatile, so you can swap out ingredients as desired. For example, you can replace the meat with smoked tofu or red beans, or use other vegetables, such as corn or arugula. The sky’s the limit! If you like it spicy, add a chili pepper and salsa “hot.”
