Ingredients for 1 servings:

  • 300 g flour
  • 150 g butter
  • 150 g sugar
  • 2 egg yolks
  • 1 tsp baking powder
  • 1 packet of vanilla sugar
  • possibly milk if needed
  • Fat for the mold
  • 500 g currants, cleaned
  • 4 egg whites
  • 100 g sugar
  • 1 tbsp cornstarch
  • 3 tbsp almond flakes
  • 1 tbsp butter for frying
  • possibly sugar if needed

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 20 minutes

Swabian currant cake

Prepare a shortcrust pastry from the ingredients. Wrap it in cling film and refrigerate for about an hour. Beat the 4 egg whites until stiff peaks form. When the peaks are almost firm, add the sugar, then stir in the cornstarch at the end. Grease a springform pan, roll out the pastry, and pour into the pan. Form a raised edge. Carefully fold the currants into the beaten peaks and pour into the pan. Bake in a preheated oven at 160°C (top/bottom heat) for about 50 minutes. Fry the flaked almonds in 1 tablespoon of butter, adding a little sugar at the end if desired, and scatter over the finished cake.
