TRI EGG – Scrambled eggs with amaranth

Ingredients for 1 servings:

  • 4 eggs
  • 3 tbsp amaranth, puffed
  • 1 tsp, heaped black cumin
  • 1 tsp, heaped chicken broth, instant, yeast-free
  • 2 tbsp extra virgin olive oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 7 minutes

for endurance athletes

Briefly toast the black cumin seeds in a nonstick pan. Whisk the eggs with the chicken broth powder, black cumin seeds, and puffed amaranth in a mixing bowl until the first bubbles appear. Add olive oil to a preheated nonstick pan. Add the egg mixture. Stir gently with a wooden spatula until the amaranth is no longer visible. The egg should not dry out, so transfer it to a plate in good time. A great source of protein after endurance training. I only use organic products.
