Tripe in Trollinger sauce

Ingredients for 2 servings:

  • 500 g tripe, pre-cooked and cut into strips
  • 1 onion(s), finely diced
  • 500 ml meat broth
  • 250 ml wine (Trollinger), dry, Lemberger also works
  • 1 bunch of parsley
  • lemon juice
  • butter
  • 1 tbsp corn flour
  • 1 bay leaf
  • 5 juniper berries
  • 4 carnations
  • salt and pepper
  • possibly flour butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onion with the parsley. Dust with a little flour and ensure no lumps form. Add the meat broth, bay leaves, juniper berries, and cloves, and simmer gently for about 10-15 minutes. Add the tripe and Trollinger, season with salt, pepper, and lemon juice. Simmer for another 5 minutes. Season again if desired. If necessary, thicken with flour and butter. Serve with fried potatoes, onions, and bacon. The Trollinger is the perfect drink.
