Truffade – potato and cheese pan

Ingredients for 4 servings:

  • 1 kg potatoes
  • 400 g cheese (Cantal or Morbier)
  • 3 garlic cloves
  • 2 tbsp parsley, chopped
  • salt and pepper
  • some oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel the potatoes and cut into 2-3 mm thin slices. Dice the cheese. Chop the garlic and fry it with the potatoes in a large pan with oil for about 5 minutes. Then cover and simmer over medium heat for about 20 minutes, stirring occasionally. Add the cheese and mix well to melt it. Season with salt and pepper and garnish with parsley to serve. This is a traditional recipe from the volcanic region of Auvergne in France. Optionally, you can also add bacon cubes to the recipe. A green salad makes a perfect main course.
