Tuna and zucchini patties

Ingredients for 1 servings:

  • 1 zucchini
  • 1 can of tuna in its own juice
  • 1 m.-sized eggs
  • 2 tbsp oat flakes, fine
  • 1 tbsp olive oil
  • salt and pepper
  • Gouda, grated
  • Goat’s cheese, as required

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Low-carb

Grate the zucchini into a bowl, season with salt, and let stand for 10 minutes. Squeeze any excess water from the zucchini through a tea towel. Mix the zucchini, tuna, egg, oats, and, if desired, a little grated cheese together. Knead, season with salt and pepper, and form into small balls or patties. Heat a pan with oil and fry the patties until golden brown on both sides. If desired, add goat’s cheese and wait until it melts in the heat. This yields approximately 3-4 medium-sized patties.
