Ingredients for 1 servings:
- 1 kohlrabi
- 1 handful of cherry tomatoes
- 1 shallot(s)
- 100 g herb quark (spring quark)
- 50 g lean ham cubes
- 3 eggs
- salt and pepper
- 1 tbsp vegetable oil

Low carb, super healthy
Peel the kohlrabi and cut into medium-sized pieces. Heat a pan with the vegetable oil, add the kohlrabi pieces to the hot pan, finely chop the shallots, and add them to the pan, along with the ham cubes. Fry everything until the kohlrabi develops a roasted aroma. Halve the cherry tomatoes, whisk the eggs in a separate bowl, add the tomatoes to the eggs, and add everything to the pan. Continue frying until the eggs are set. Transfer everything to a bowl, add the spring quark, and stir in. Season with salt and pepper. Per serving: approximately 530 kcal
