Ingredients for 4 servings:

  • 800 g turkey heart(s), alternatively chicken hearts
  • 2 large eggs
  • n. B. Flour
  • salt and pepper
  • nutmeg
  • Garlic granules
  • Paprika powder
  • Oil for frying

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

So juicy and tender

First, clean the hearts and remove any tubular ends. To create a flat slice, you need to cut them with a butterfly cut. To do this, cut down the middle, but not all the way through, only about halfway through, then continue cutting left and right. Then, using a mallet, flatten the hearts into slices of meat, like a schnitzel. Season the thin heart slices generously on both sides, mix them in a bowl with two beaten eggs, then coat them in flour and fry in a pan with oil on both sides until golden brown.
