Turkey Pie with Mashed Sweet Potatoes in Cranberry Sauce

Pate

  • 400 g Turkey fillet
  • 300 g Mixed minced meat
  • 1 Egg
  • 1 tbsp Worcester sauce
  • 1 tsp Ground cumin

  • Salt
  • Pepper from the grinder
  • Sea-Salt
  • 3 Garlic cloves
  • 1 handful Parsley
  • 10 Discs Toast
  • Sugar
  • 1 shot Milk
  • 2 tbsp Butter

Mashed sweet potatoes

  • 1 Sweet potato big
  • 3 Small potatoes
  • 150 g Butter
  • Freshly grated nutmeg
  • Salt
  • 200 ml Milk

Cranberry sauce

  • 200 g Fresh cranberries
  • 100 g Sugar
  • 1 shot Apple Cider Vinegar
  • 1 pinch Salt
  1. Remove the edges of the toast and soak it with milk. Lay out the remaining toast slices, slightly overlapping, on cling film and roll flat.
  2. Season the mince with Worcester sauce, paprika powder, cumin, salt, pepper, sugar and wild garlic and mix with the toasted edges and egg.
  3. Cut a pocket into the turkey fillet. Peel the garlic and pound it with a good pinch of coarse sea salt, coarsely chopped parsley, a little sugar and pepper in a mortar to form a paste and pour this into the meat pocket.
  4. Spread the mince on the toast and place the fillet on top. Now pull the foil tight and roll everything up carefully. Open gaps must no longer be visible!
  5. Leave to set for an hour in the refrigerator and then remove the foil, brush the outside with butter and wrap with aluminum foil and cook in the oven at 170 ° C for 60 minutes.

Mashed sweet potatoes

  1. Peel and roughly cut the potatoes – boil them in salted water until soft, drain them and put them through a potato press.
  2. Then chop ice-cold butter into small cubes and mix it into the mixture with a pounder. Add a little milk and stir until everything is creamy. Season with salt and nutmeg.

Cranberry sauce

  1. Boil the cranberries with the sugar and a dash of water until the peel bursts open.
  2. Mash all the berries with a fork and season the sauce with apple cider vinegar and salt.
  3. Pass everything through a sieve and bring to the boil again, season to taste and keep warm, otherwise the sauce will quickly get a jammy consistency.
