Turkey schnitzel with curry fruits

Ingredients for 2 servings:

  • 2 turkey schnitzels, approx. 200 g each
  • 30 g clarified butter
  • 1 can cocktail fruit, approx. 200 g
  • 1 tsp honey
  • 1 tbsp curry powder
  • 1 dashes lemon juice
  • n. B. Pepper, colored, from the mill
  • n. B. Salt
  • ½ bunch curly parsley, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rinse the schnitzels in cold water, pat dry, lightly pound, and fry in a pan in heated clarified butter for about 2 minutes on each side. Then remove the schnitzels, season with salt and pepper, and keep warm. Drain the fruit (reserve the juice) and fry briefly and vigorously in the pan’s juices. Stir in the honey, lemon juice, and curry powder, then deglaze with the fruit juice. Reduce slightly and season with salt and pepper. Serve the schnitzels on plates with rice or tagliatelle as a side dish, pour over the curried fruit, and garnish with chopped parsley.
