Turkey strips in lime and coconut sauce

Ingredients for 4 servings:

  • 750 g turkey breast, cut into strips
  • 400 ml coconut milk
  • 2 stalks of fresh lemongrass (or lime juice)
  • 1 lime(s) or lemon
  • 1 chili pepper(s), red
  • 1 clove(s) garlic
  • 1 tbsp butter
  • Salt
  • pepper
  • oil

Rinse the turkey under cold running water, pat dry, and cut into bite-sized pieces. Season with salt and pepper. Wash the lemongrass, remove the top and bottom ends, and halve the stalks lengthwise. Brush the lime thoroughly under hot water and cut into eighths. Wash the chili pepper, deseed it, halve it, and cut it into thin strips. Peel and press the garlic. Heat the butter and a little oil in a saucepan and brown the turkey on all sides. Add the lemongrass, chili, and garlic and fry for about 1 minute. Add the lime eighths and top up with coconut milk (and lime juice, if desired). Bring to a boil and simmer on low heat for about 7-8 minutes. Remove the lemongrass. Season to taste and serve immediately.
