Ingredients for 4 servings:
- 600 g turkey breast
- 4 tbsp olive oil
- Parsley, chopped
- 2 onions
- 2 garlic cloves
- 1 tbsp butter
- 500 ml beef broth
- 125 ml cream
- 125 ml white wine
- 4 tbsp blue cheese (e.g. Gorgonzola)
- 1 pinch(s) of caraway powder
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
For the sauce, peel and thinly slice the onions and garlic. Heat butter in a saucepan and sauté the onions and garlic. Deglaze with white wine, pour in the stock and cream, and slowly reduce. Blend in the blue cheese with a hand blender and season the sauce with salt, pepper, and caraway. Meanwhile, finely chop the turkey breast and season with salt and pepper. Heat olive oil in a pan and sear the meat. Remove from the pan, add to the sauce, and let it simmer briefly. Serve on plates and sprinkle with chopped parsley. Serve with homemade spaetzle and vegetables.
