Turkish bean salad with feta cheese

Ingredients for 1 servings:

  • 1 can of beans, thick, green, Turkish, 550 g in brine
  • 75 g sheep’s cheese
  • 2 tbsp Ajvar, mild or hot
  • 3 leaves mint, fresh
  • ½ tsp salt
  • 1 pinch(s) of sugar
  • 1 tsp olive oil
  • 1 tsp balsamic vinegar, creamy

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Remove the tough skins from the beans. Place them in a bowl with a lid. Cut the feta cheese into small cubes. Finely chop the mint. Add both to the beans. Make the dressing with the remaining ingredients and whisk until very smooth. Pour over the salad and let it sit for about 2 hours. Turn the bowl upside down occasionally.
