Ingredients for 6 servings:
- 500 g chicken breast fillet(s)
- 1 small eggplant(s)
- ½ small zucchini
- 1 bell pepper(s), yellow
- 1 piece(s) ginger
- 3 cloves garlic
- 1 small can of tomatoes, 400 g
- 800 ml coconut milk
- 200 g natural yogurt
- 3 tbsp tomato paste
- 1 tbsp peanut butter
- 2 tbsp black cumin, whole
- 3 tsp mustard seeds, brown
- 2 tsp fenugreek seeds
- 1 tsp coriander, whole
- ½ tsp cardamom
- 2 carnations
- 2 tsp allspice powder
- 2 tsp paprika powder
- 2 tsp vegetable broth

- 900 g couscous, instant
Instructions

Place the mustard seeds, fenugreek seeds, coriander, cardamom seeds, and cloves in a small pan and roast without oil for a maximum of 5 minutes. Grind to a powder in a mortar and pestle. Cut the chicken breast into bite-sized pieces. Finely chop the garlic cloves and half of the bell pepper. Sear the chicken breast in a little oil. As soon as it starts to brown, add the garlic, chopped bell pepper, and black cumin seeds and fry briefly. Add the tomato paste, peanut butter, and half of the yogurt, mix into the mixture, and let it cook briefly. Chop the ginger into small pieces. Add the tomatoes and break them up in the pan as desired. Add 400 ml of coconut milk, the remaining yogurt, the ginger, the spice powder, allspice, paprika, and vegetable stock. If you like it spicy, stir in some chili powder or whole chilies. Bring to a boil, stirring occasionally. Chop the eggplant and add half to the boiling curry. Slice the zucchini and bell pepper, and add the rest of the eggplant to the pot. Simmer for about 10-15 minutes, stirring occasionally. Add the second can of coconut milk and the remaining vegetables, mix well, and cook for about 5 minutes. Season to taste with salt, pepper, and any other spices. Reduce the heat to low and let the pot stand for about 5 minutes. Prepare the couscous according to the package instructions and serve with the chicken and vegetable curry.
