Turkish potato salad with tomato salça

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 1 onion(s)
  • ½ lemon(s)
  • ½ cup(s) green olives
  • ½ cup capers
  • 3 tbsp Tomato paste, Turkish (Salça)
  • 5 tbsp water
  • 3 tbsp olive oil
  • 1 small bunch of parsley
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, dice, and boil the potatoes. Finely dice the onion and chop the parsley. For the sauce, combine the tomato sauce with water and olive oil in a bowl until smooth. Add the juice of half a lemon and season generously with salt and pepper to taste. Mix the cooked potato cubes with the sauce and stir in the chopped onion. Halve the olives and add them to the potatoes along with the capers and chopped parsley. Enjoy warm or cold.
