Ingredients for 3 servings:
- 50 g Parmesan
- e.g. pesto (bought or homemade)
- 3 slice(s) of beef fillet(s) or beef steaks
- salt and pepper
- 30 g pine nuts
- 100 ml red wine
- Red wine for deglazing
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Grate the Parmesan cheese. Preheat the oven to 200°C. Season the beef fillets or steaks with salt and pepper and sear them well on both sides. Remove from the oven and place in an ovenproof dish. Deglaze the meat with a little red wine and stir into the pesto. Spread this over the fillets and sprinkle with the Parmesan cheese, pine nuts, and a few knobs of butter. Pour in approximately 100 ml of red wine. Bake the meat on the middle rack of the oven for 6-8 minutes. Serve hot.
