Tuscan bread salad

Ingredients for 4 servings:

  • 7 tbsp olive oil
  • 1 tbsp liquid honey
  • 3 tbsp balsamic vinegar
  • 20 small tomatoes (date)
  • 1 cucumber(s)
  • 1 onion(s), red
  • 1 bunch of basil
  • 300g ciabatta
  • 2 garlic cloves
  • 40 g pine nuts
  • salt and pepper
  • Sugar

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

For the dressing, combine 3 tablespoons of oil with the honey and vinegar. Wash and halve the tomatoes. Peel and halve the cucumber. Slice the cucumber halves. Pick and finely chop the basil leaves. Peel the onion and slice it into thin strips. Place everything in a bowl with the dressing. Cut the bread into bite-sized pieces. Peel and finely chop the garlic. Heat the bread in a pan with the garlic, pine nuts and the remaining oil and toast slowly. Add everything to the cucumber and tomato salad and mix gently. Season with salt, pepper and sugar. Serve immediately.
