Ingredients for 4 servings:

  • 300 g strawberries, fresh or frozen
  • 3 sprigs of basil
  • 1 lime(s)
  • 150 g gelling sugar, 2:1

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and hull the strawberries, cut them into pieces, and blend them finely in a blender (thaw frozen strawberries and blend them). Pick the basil leaves and finely chop them. Combine the strawberry puree with the lime juice and the preserving sugar in a saucepan. Bring to a boil and simmer for 4 minutes, stirring frequently. Remove the pan from the heat and stir in the basil. Pour the mixture into a jar and let it cool. Tastes great on brioche or white bread spread with mascarpone. Sprinkle with pine nuts, if desired.
