Tyrolean bacon dumplings

Ingredients for 6 servings:

  • 250 g dumpling bread
  • 2 eggs
  • 200 ml milk
  • Parsley
  • ½ onion(s)
  • 60 g lard
  • 1 clove(s) garlic
  • 60 g sausage (Braunschweiger sausage)
  • 60 g bacon (Tyrolean bacon)
  • nutmeg

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 13 minutes; Total time approx. 1 day 33 minutes

Recipe from a mountain hut owner from Tyrol – with the Tupperware steamer

Finely chop the onion and garlic and lightly fry with the parsley in the clarified butter. Briefly add the diced bacon and sausage and mix well. Whisk the eggs with a little milk and a pinch of nutmeg and pour over the dumpling bread. Pour the bacon mixture over the dumpling bread. Stir this mixture together and let it stand, ideally overnight. If the mixture is still too thick, add a little milk. Check it during the standing time and add a little more milk if necessary. Form the dumplings from the finished dumpling mixture and prepare them in the steamer. To do this, cook the dumplings in the microwave for 13 minutes, plus the standing time.
