Recipe for fried udon noodles with vegetables

For this recipe, you need 400 grams of udon noodles, 1 carrot, 1 small piece of ginger, 2 cloves of garlic, 1 chili pepper, 50 grams of brown mushrooms, 2 spring onions, and 1 tablespoon of peanut oil, and 1 tablespoon of toasted sesame seeds.

  • First, wash the vegetables and cut them into small pieces.
  • Now heat up your wok or pan and then add the peanut oil. Fry the carrots, then add the chopped chili and garlic and simmer for about a minute.
  • Then add the ginger and mushrooms and fry everything together for a short time.
  • Then add the udon noodles and let everything fry for about two minutes, stirring occasionally.

Delicious and quick peanut sauce

For the right peanut sauce, you need 100 grams of peanut butter, 1 tablespoon of honey, 1 clove of garlic, 160 milliliters of vegetable stock, 2 tablespoons of curry powder, and some chili powder.

  • First, chop the garlic clove.
  • Then put the peanut butter in a pan with the honey, curry powder, chili powder, broth, and garlic and mix well.
  • Bring everything to a boil over medium heat.
  • When the sauce thickens, it’s ready and can be enjoyed with the delicious udon noodles.
