Uncle Tom's millet patties with apple compote

Ingredients for 6 servings:

  • 800 g millet
  • 16 dl vegetable broth
  • 1 large onion(s), red
  • 3 garlic cloves
  • 3 eggs
  • 160 g flour
  • 10 tbsp olive oil
  • salt and pepper
  • 1 piece(s) carrot(s)
  • 20 g flaxseed
  • 1,000 g apples, tart, e.g. B. Boskoop
  • 40 ml lemon juice
  • 100 ml water
  • 40 g sugar
  • 1 packet of vanilla sugar

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 15 minutes

Simmer the millet in the vegetable broth for about 10 minutes, then let it steep while still hot. While the apples are cooling, peel and chop them. Bring to a boil with water, sugar, lemon juice, and vanilla sugar, and simmer for about 10 minutes. Then chill the compote. Fluff the cooled millet with a fork. Stir in the onions and garlic and let it rest. Grate the carrot, add the flaxseed, eggs, and flour, and knead everything into a firm dough, adding a little water if necessary. Form the dough into patties. Fry in batches in a pan over medium heat until golden brown. Serve with the apple compote. Tip: The patties also make excellent patties for veggie burgers.
