Ingredients for 12 servings:
- 2 eggs
- 100 g sugar
- 100 g butter, soft
- 50 g yogurt
- 2 lemons
- 1 pinch of salt
- 250 g flour
- 2 tsp baking powder
- 4 tubes of food coloring (blue, red, yellow, green)
- 3 tbsp lemon juice
- 100 g powdered sugar
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour
First, cream the softened butter with the sugar. Then add the two eggs. Squeeze the lemons and add the juice to the butter, sugar, and egg mixture. (If you don’t like lemons, this recipe also works perfectly with orange juice.) Then stir in the yogurt. Mix the flour with the baking powder and a pinch of salt. Add this mixture to the other mixture and mix everything well. Divide the batter into six small bowls, spreading it slightly unevenly. There should be a little more batter in the bowl for the batter that will be colored red. Since the red batter goes on top, where the pan is wider, you’ll need a little more. Add a few drops of red food coloring to the first bowl to create a beautiful reddish-pink hue. Add red and yellow food coloring to the second bowl to create a bright orange. Color the third part yellow and the fourth part pale green. Add the blue food coloring to the fifth bowl. Use a little more here, as otherwise the batter’s natural yellow color will also turn green. Add red and blue food coloring to the last bowl to create a beautiful purple hue. Grease twelve muffin cups and spoon in the batter alternately. First the purple, then the blue, and finally the green. Then yellow, orange, and finally red. Bake the colored muffins at 180 degrees Celsius (convection oven) for about 20 minutes. After baking, let them cool and then cover with icing made from the lemon juice and powdered sugar. Tip: Yogurt gums are perfect for decoration.
