Ingredients for 4 servings:
- 500 g flour (can also be wholemeal flour)
- 2 eggs
- 200 ml water or milk (can be a little more)
- 5 tsp olive oil
- 150 g cream cheese, grainy, for the filling
- 100 g cheese, grated, spicy, for the filling
- 200 g quark, for the filling
- Salt and pepper for the filling
- Chili powder, for the filling
- Caraway seeds, for the filling
- Parsley, for the filling
- Parmesan
- Oil or lard
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Make a pasta dough from flour, eggs, water, and oil. Combine the filling ingredients and season to taste—you can use a bit more flour if you like. Shape the dough into small rounds, roll them out, place a generous amount of filling in the center, and fold them over, pressing the edges together firmly. Cook in boiling salted water until the doughnuts float to the top. Drain and fry briefly on both sides in a hot pan with a little oil or lard. Sprinkle with Parmesan cheese and serve.
