Upside-down fried potatoes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 3 tbsp oil
  • 200 ml vegetable stock
  • possibly onion(s), diced or cut into thin half slices
  • salt and pepper
  • Herbs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

They are first fried and then cooked.

Wash and peel the potatoes. If you’re using new potatoes, you can leave the skin on. Halve or quarter the potatoes, depending on their size. Heat a large pan with oil and fry the potatoes over high heat for 8 minutes. Then deglaze with vegetable stock and cook with the lid on for 15 minutes over medium heat. Open the lid, season the potatoes, and fry for another 2-3 minutes. If you like, add a few onions after the 15 minutes.
