Upside-down peach cake

Ingredients for 1 servings:

  • 2 tbsp butter
  • 3 tbsp brown sugar
  • 1 gr. can/n peach(s), cake
  • 100 g butter, soft
  • 2 tbsp brown sugar
  • 2 eggs
  • 2 tbsp beet syrup
  • 4 tbsp syrup, caramel
  • 1 ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • 100 g flour
  • 2 tsp, heaped baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Caramelize the butter and brown sugar for 3 minutes at 750 watts in a glass dish (24 x 24 cm or 26 x 22 cm), stirring frequently! Arrange the well-drained peach slices in the dish over the caramelized sugar. Mix the batter ingredients in the order listed and spread over the peaches. With a turntable: cook for 10 minutes at 360 watts. Then “bake” for another 9 minutes at 600 watts. If necessary, add another minute at 750 watts. Without a turntable: cook for 10 minutes at 360 watts. After 5 minutes, turn the dish a quarter turn. After 5 minutes, turn it another quarter turn, then “bake” for another 9 minutes at 600 watts. After 5 minutes, turn it again. If necessary, add another minute at 750 watts. The edges of the cake will separate from the dish. Let stand for 5 minutes. Then turn out, let cool, and dust with powdered sugar. Serve with whipped cream. It tastes even better the next day. You won’t use up all the peaches.
