Ingredients for 4 servings:
- 150 g butter
- 100 g powdered sugar
- 1 egg yolk
- 250 g flour, sifted
- 40 g fresh ginger, finely grated
- 50 g hazelnuts, grated
- 1 packet of baking powder
- 1 vanilla pod(s), the pulp
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Crumble the butter and flour together with the remaining ingredients and knead into a dough. Chill the dough in the refrigerator to make it easier to work with. Roll out with a rolling pin and cut out any shapes you like. Makes about 60 cookies. Bake in the oven at 180°C (350°F) for about 15 minutes until golden brown. Once cooled, decorate as desired. For example, cover with sugar glaze, or sandwich two cookies together with jam and dip halfway into the chocolate glaze. You can use more or less ginger to suit your taste. The cookies will become nice and soft after storing for a few days.
