Variations of Passion Fruit and Mango on Strudel Dough
The perfect variations of passion fruit and mango on strudel dough recipe with a picture and simple step-by-step instructions.
Passion fruit buttermilk mousse
- 100 ml Buttermilk
- 100 g Passion fruit maracuja pulp
- 100 g Basic sweet
- 40 g Basic texture
- 3 Pc. Gelatin sheet
- 10 ml Peach liqueur
Mango ice cream
- 125 g Basic sweet
- 125 g Mango puree
- 125 ml Cream
- 60 ml Peach liqueur
- 20 g Basic texture
- 0,5 Pc. Vanilla pod
Mango, raspberry and mascarpone cream
- 100 g Mascarpone
- 100 g Mango puree
- 100 g Raspberry pulp
- 50 g Basic sweet
- 30 g Basic texture
- 4 Pc. Gelatin sheet
- 15 g Raspberry spirit
- Carefully place a sheet of strudel dough on a flat surface. Brush the dough with liquid clarified butter and then sprinkle with sugar. Then put a second sheet on top and repeat the process. Now cut out two squares for each person using a square shape. The same thing is repeated with 2 other sheets and this time long strips are cut so that they can then be wrapped around two round aluminum shapes. Then everything is baked golden yellow in the oven at 180 degrees. Then carefully expose and let cool down.
Passion fruit buttermilk mousse
- Soak the gelatine in cold water. Warm the liqueur and dissolve the gelatin. Puree all other ingredients with the mixer, add the liqueur and fill into round silicone molds and refrigerate.
Mango ice cream
- Put all ingredients in a saucepan, bring to the boil and mix with a hand blender. Pour into an ice cream maker or Pacojet container and freeze.
Mango, raspberry and mascarpone cream
- Soak the gelatine in cold water. Heat the raspberry brandy and dissolve the gelatin. Puree all other ingredients with the mixer, add the raspberry brandy and chill.
- Now place the round strudel pastry shapes on the edge of the plate. The passion fruit buttermilk mousse is placed in one curve, the mango ice cream is placed in the other curve
- Opposite we sprayed the mango-raspberry-mascarpone cream with the piping bag. Then you put a square of strudel pastry on top and repeat the whole thing again.
