Veal Medallions with Porcini Mushroom Ragout and Hash Browns

Ingredients
 

Veal medallions:

  • 3 Veal medallions of 80 g
  • 2 tbsp Sunflower oil
  • Coarse sea salt from the mill
  • Colorful pepper from the mill

Sauce:

  • 4 tbsp Crème fraîche with herbs
  • 4 tbsp Milk
  • 1 Sting Butter
  • 1 Splash Lemon juice
  • 1 big pinch Salt
  • 1 big pinch Pepper
  • 1 tsp Chicken broth instant
  • Leaked meat juice from the veal medallions

Porcini mushroom ragout:

  • 300 g Porcini mushrooms, cleaned and cut
  • 0,5 Onions approx. 150 g
  • 2 tbsp Butter
  • 0,5 Cup Plucked parsley
  • 2 tbsp Creme fraiche Cheese
  • 1 big pinch Coarse sea salt from the mill
  • 1 big pinch Colorful pepper from the mill

Rösti corners:

  • 6 Rösti corners à 50 g frozen (here: from ALDI Nord)

Serve:

  • 1 Cherry tomato cut in half
  • 6 Grapes

Instructions
 

Veal medallions:

  • Fry the veal medallions (one divided) on both sides in sunflower oil, season with coarse sea salt from the mill and colored pepper from the mill and keep warm in the oven at 50 ° C.

Sauce:

  • In the frying pan, crème fraîche (4 tbsp), milk (4 tbsp), butter (1 teaspoon), lemon juice (1 squirt), salt (1 pinch), pepper (1 pinch) and instant chicken stock (1 tsp) Stir in with the whisk, bring to the boil briefly and reduce / reduce to a low temperature for a few minutes. Finally / serve, stir in the leaked meat juice.

Porcini mushroom ragout:

  • Clean / brush the stone mushrooms and cut into pieces. Peel and dice the vegetable onion. Wash the parsley, shake dry and pluck. Heat the butter (2 tbsp) in a pan, fry the onion cubes in it / stir-fry, add the mushrooms, briefly sear / stir-fry, stir in the crème fraîche (2 tbsp) and add coarse sea salt from the mill (1 big pinch) and colored pepper the mill (1 big pinch) and finally fold in the plucked parsley.

Rösti corners:

  • Cook / bake the hash browns in a preheated oven according to the instructions on the package.

Serve:

  • Serve veal medallions with sauce, porcini mushroom ragout and hash browns, garnished with half a cherry tomato and grapes.
