Vegan apple pancakes

Ingredients for 2 servings:

  • 300 g flour
  • 400 ml soy milk (soy drink) or rice drink, approx. (as needed)
  • 1 tsp baking powder
  • 1 packet of vanilla sugar
  • 1 large apple
  • 1 m.-sized apple
  • e.g. powdered sugar
  • a little oil for frying

Working time approx. 40 minutes; Total time approx. 40 minutes

without egg, milk, quick and easy

First, mix all the dry ingredients in a bowl. Then add the soy milk and mix everything together either with a mixer or with a whisk. Peel, quarter, and grate the large apple, and cut the small apple into bite-sized cubes. Then add the apple mixture to the batter. Fry the batter in batches on a medium heat with a little oil on both sides. Tip: To check if the pancakes are cooked through on the inside, pierce the center with a fork and press down a little. If the batter is still runny, they need a little longer. You can vary the batter by using different fruits, and if it’s around the Christmas season, you can also add cinnamon or more sugar – it’s up to you.
