Vegan berry cheesecake without flour

Ingredients for 1 servings:

  • 80 g oat flakes
  • 1 packet of baking powder
  • 20 g protein powder, vegan
  • 1 pinch of stevia powder, approx. 0.3 g
  • 1 banana(s)
  • 100 ml soy milk (soy drink) or other plant milk
  • 150 g soy quark (quark alternative)
  • ½ pack of pudding powder
  • 1 pinch of stevia powder, approx. 0.3 g
  • 50 g berries of your choice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cheesecake made from oat dough

Mix the dry ingredients. Puree the banana with the milk, knead everything into a dough, and pour into a small cake tin. For the cream, mix the soy curd with the pudding powder and stevia and spread it over the batter. Finally, scatter the berries over the cake. If you like, you can also gently mix them into the cream, but unfortunately, I find it mushy. Bake in the oven at 180°C (top/bottom heat) for about 20 minutes. The whole cake has about 700 kcal.
