Recipe for a vegan walnut bread
This bread is light and fluffy and gets a wonderful aroma from the roasted walnuts. Ingredients for the bread : 220g wheat flour, 180g wholemeal flour, 100g walnuts, 2 teaspoons salt, 1/4 teaspoon sugar, 1/2 cube yeast, 200g lukewarm water, 3 tablespoons olive oil.
- First, chop the walnuts and toast them in a pan without oil until fragrant. While the nuts are cooling, mix all the dry ingredients, except the sugar, in a bowl.
- In a second bowl, crumble the yeast into the lukewarm water and add the sugar. Wait a few minutes and see if the mixture starts to foam, because then the yeast is active.
- Now you can add the yeast mixture and the olive oil to the dry ingredients and knead well. Then you can work the walnut kernels into the dough. Then lightly grease a large bowl and place the dough in it. Cover and let rise in a warm place for an hour.
- If the dough has risen, knead it again and shape it into an oval loaf, which you then place on a baking tray lined with baking paper. Dust the dough with some flour and let it rise covered for another 40 minutes. Preheat the oven to 180 degrees.
- After the renewed rising time, bake the bread in the oven for 20 to 25 minutes. Allow the bread to cool completely before slicing.
Recipe for a vegan raisin bread
This bread is baked with a sweet yeast dough and refined with raisins and is ideal for a sweet breakfast. You need : 300g spelled flour, 75g sugar, 1 packet of dry yeast, 250ml soy milk, 3 tablespoons rapeseed oil, 120g raisins.
- First mix the spelled flour with the sugar and the dry yeast. Then add the soy milk and canola oil. Knead the dough well with the dough hook of your hand mixer for ten minutes. Then add the raisins and work them into the batter.
- Cover the dough with a damp cloth and let it rise in a warm place for 45 minutes. Then dust it with some flour and knead it again briefly.
- Now put the dough in a greased loaf pan. Press the raisins that are protruding from the surface of the dough well into the dough, otherwise they will turn too brown during baking. Cover the dough again with a damp cloth and let it rise again for 30 minutes.
- Bake the bread in a preheated oven at 175 degrees for about 30 minutes. After baking, remove from the mold and let cool completely.
Recipe for a buckwheat nut bread
This recipe is also suitable for those who suffer from gluten intolerance, as buckwheat flour is naturally gluten-free. The bread tastes nice and nutty and goes well with both sweet and savory spreads. You need : 500g buckwheat flour , 1 packet of baking powder, 2 teaspoons of salt, 200g of various nuts (walnuts, hazelnuts, etc.), 20g of pumpkin seeds, 30g of chia seeds, 200ml of water (to swell the chia seeds), 450ml of water (for the dough), 1 tbsp agave syrup
- First mix the chia seeds with 200ml water and let the mixture swell for 20 minutes so that a gel-like mass is formed. In the meantime, you can roughly chop the nuts and preheat the oven to 200 degrees for a fan oven.
- Now mix the dry ingredients in a bowl. Then add the 450ml water, the agave syrup, the chia mass and the chopped nuts. Knead the whole thing well with the dough hook of your hand mixer.
- Grease a loaf pan and pour the batter into it. Now cut the dough lengthwise with a knife. Brush the dough with a little water and sprinkle the surface with the pumpkin seeds. Bake the bread for about 60 minutes.
