Vegan bread soup with peppers

Ingredients for 2 servings:

  • 300 g mixed bread, dark
  • 1 m.-sized onion(s)
  • 1 small leek
  • 1 jar of Puszta salad, approx. 190 – 330 g
  • 20 g barley groats
  • 2 tbsp ajvar
  • 1 liter of water
  • 2 tsp vegetable stock powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and finely chop the onion. Wash and trim the leek, then slice it into thin rings. Dice the bread. Drain the Puszta salad. Place the barley pearls in a sieve, rinse with water, and let them drain. Bring the water to a boil in a large pot. Add the diced onion, leek, bread, drained Puszta salad, and pearl barley to the boiling water. Add the vegetable stock powder and ajvar and mix well. Simmer over low heat for approximately 20-30 minutes.
