Vegan millet meatballs

Ingredients for 2 servings:

  • 250 g millet
  • 750 ml water
  • 50 g walnuts
  • 1 tbsp wholemeal spelt flour
  • 1 onion(s)
  • Sage or other herbs
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Place the millet in a pot with the water and half a teaspoon of salt, bring to a boil, and let it swell for about half an hour. Add a little more water if needed. In the meantime, chop the walnuts and slice the onion, and sauté them in a little oil until translucent. Once the millet has absorbed the water and is soft, combine all the ingredients. Season with sage or other herbs, if desired, and salt and pepper to taste. Form into patties and fry until golden brown on both sides. Serve with tomato salad and avocado cream.
