Vegan burger patties

Ingredients for 2 servings:

  • 1 carrot(s)
  • 1 half zucchini
  • 1 small onion(s)
  • 75 g sunflower seeds
  • 1 ½ tbsp flaxseeds or chia seeds, finely blended
  • 4 ½ tbsp water
  • 75 g breadcrumbs
  • some salt and pepper, black
  • ½ tbsp oregano
  • 4 tbsp olive oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

First, peel the carrot and wash the zucchini, then finely grate both. Roast the sunflower seeds in a pan without oil, then add them to a bowl. Finely dice the onion and fry in two tablespoons of olive oil. After about a minute, add the grated vegetables to the onions in the pan and fry for about five minutes. Now add the vegetables to the bowl with the sunflower seeds and season the mixture with salt, pepper, and oregano. To thicken the mixture, mix either 1.5 tablespoons of finely ground flaxseed or chia seeds, or a mixture of both, with 4.5 tablespoons of water and add to the mixture. Add the breadcrumbs and knead everything thoroughly. Form the mixture into burger patties and fry them in the remaining two tablespoons of olive oil until browned to your liking.
