Ingredients for 12 servings:

  • 1 cup pitted dates
  • ½ cup almonds
  • ¼ cup oatmeal
  • 2 tbsp chia seeds
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Place the dates, almonds, oats, chia seeds, coconut oil, cinnamon, and salt in a food processor or blender and blend until well combined. Form the mixture into small balls with your hands and place them on a baking sheet lined with parchment paper. Refrigerate the energy balls for about 30 minutes to firm up. You can store the energy balls in a sealed container in the refrigerator and enjoy them as a snack whenever you like.
