Vegan gnocchi in Schupfnudel style

Ingredients for 2 servings:

  • 500 g gnocchi, vegan
  • salt water
  • 200 g sauerkraut
  • 1 onion(s)
  • some vegetable oil
  • 3 tomatoes, dried
  • Salt and pepper, black from the mill

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

quick and hearty, vegan

Cook the gnocchi in salted water according to the package instructions and drain. Cut the onion into medium-sized strips and dice the sun-dried tomatoes. Heat the oil in a pan and fry the gnocchi until crispy, turning occasionally. Add the onions and tomatoes and fry briefly. Stir in the drained sauerkraut and heat for another 5 minutes. Season with salt and pepper. Serve with a green salad.
