Ingredients for 2 servings:
- 175 g spelt flour
- 5 m.-sized potatoes
- 3 tbsp oat bran
- n. B. Salt
- some flour for processing
Instructions
Working time approx. 50 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes
Boil the potatoes in salted water until tender. Peel them straight from the hot pan and mash them with the flour, salt, and oat bran to form a dough, then knead it. Once the dough no longer sticks to your hands, divide it into 4 pieces and shape them into rolls. The rolls should be about 2 cm in diameter. Sprinkle with a little flour and cut into equal-sized pieces. Then run a fork over the pieces of dough to create the typical gnocchi pattern. Meanwhile, bring a medium-sized pot of salted water to a boil. Add the gnocchi to the pot and simmer until they float to the surface. Remove them from the water with a slotted spoon and serve with the sauce. Tip: For a roasted version, fry the skimmed gnocchi briefly until golden brown.
